Quinoa pancakes

So today, let's start with a breakfast idea. This protein packed seed makes the most moist and fluffy pancakes. Perfect with either sweet or salty toppings, this is a very convenient recipe to have around when you are short of groceries.

For an individual portion of four pancakes you'll need to soak overnight half a cup of quinoa in just enough water to cover. In the morning, drain any excess water from the soaked quinoa and put it in a blender. Add about one quarter of a cup of water and a pinch of salt. Blend until smooth and check if the consistency is no too thick. Add a bit more water if you think it is necessary. Heat a teaspoon of ghee in a pan and cook the pancakes as usual. Serve with fruit and honey or with hummus and fresh vegetables.

You can also add fruit to the batter, like banana or blueberries if you wish. Another option is flavouring the batter with vanilla or cinnamon. As you can see, there are lots of possibilities, just use your culinary creativity!
